PARSLEY
Historical records show that parsley was fed to chariot horses in
the times of the Roman Empire to maintain their speed. It has been used
for centuries as a herbal remedy for numerous maladies. Parsley is a
biennial.
The foliage type of parsley is commonly used for garnishing and flavoring.
There is a turnip-rooted type used in cooking like root vegetables. Parsley
is available throughout the year. It's peak months are June and July.
Quality parsley is bright green, and free from dirt and yellow leaves.
Parsley should be kept moist and cool to stay fresh.
Use parsley in salads and as a garnish. Parsley juice is popular and
beneficial.

Vitamn A drink. Parsley is also very high in iron, copper and manganese.
Parsley is a diuretic. It is good for kidney conditions. Like most
green vegetables, they are highly concentrated, so a little bit of parsley
juice goes a long way. It is best to put one big handful of parsley thorugh
the juicer. Then fill up the rest of the glass with carrot juice. Parlsey
is beneficial to the sexual system and is alleged to stimulate brain
activity.
